Back in 1870, the original Melbourne Gin Palace faced closure, labelled "Filthy and disgusting" by a Magistrate. Fast forward to 1997, founder Vernon Chalker decided to resurrect the joint, and restore Gin’s rightful place as the supreme spirit. A rebirth celebrated with Martinis and Champagne flowing like a heady river of debauchery every night of the week.
Our gin selection? A carefully considered mix of burgeoning and leading gins from every fissure of the world, and the largest in the Southern Hemisphere – 330 and counting. Dive into the menu at your own pace, or tap into the brains of our staff—some of whom are here for their dazzling looks, others for their expertise, and perhaps a few for both.
Our cocktails? They're wet adventures guided by rare and seasonal ingredients. We sling together fresh produce, exotic (and almost extinct) botanicals, and some words you'd need a dictionary to understand. Our Gin & Tonic game is prime, with capacious goblets, ripe fruits, and tonics handpicked to compliment. Feeling extra adventurous? Challenge our expert staff to whip up a version just for you.
